When Alvin and I go to Gulf Shores we love to eat at LuLu's. LuLu's is owned by Lucy Buffet who is Jimmy Buffett's sister. I cooked Poppy Seed Chicken last night and tried Lucy's recipe for the first time. It was soooooo easy to fix and so yummy! I altered the recipe. Alvin does not like peppers of any kind so I just used green bell peppers to add flavor and we ate this as a salad not as an appetizer with chips or crackers. Thought you guys might like the recipe.
Dressing:
3/4 c. balsamic vinegar
1/2 c. extra virgin olive oil
1/4 c. sugar
2 teaspoons salt
1 teaspoon black pepper
4 (15 oz.) cans black-eyed peas, rinsed and drained
1 c. chopped green bell pepper
1 c. chopped yellow bell pepper
1 c. chopped red bell pepper
1 c. chopped red onion
1 1/2 c. cherry tomatoes, quartered
1 c. chopped fresh parsley
Directions:
1. Combine all dressing ingredients in a jar, cover tightly and shake.
2. Rinse and drain peas well, place in bowl.
3. Add remaining ingredients and dressing. Toss well.
4. Serve with tortilla chips or crackers.
